Shreveport Personal Trainer – Low-Carb Meatloaf Recipe

Right off the bat, I’m gonna let you know – I love to eat.  Love it.

No, I’m not a “foody.”  As some of you have experienced, I don’t tolerate food-snobs well.  It’s . . . dangit, that stuff is just grating on the nerves.

And honestly, it’s not the best way of picking healthy recipes and dining habits.

But it’s mostly the food-snob thing.

SO, back on topic.  One of my favorite foods is pizza.  It’s actually kinda healthy – tomato, cheese, meat, vegetables.  It’s just all the (for most of us, anyway) unnecessary carbs that ruin it.  Oh, and the lack of more meat.  Gotsta get that protein, right?

So, what’s the best way to make lo-carb pizza?

I don’t know, so I’m making meat loaf.

I love meat loaf (are you seeing a pattern here?).  It’s like pizza, but without all that annoying bread to get in the way.  PLUS, you can absolutely load it down with anti-oxidant rich vegetables, more meat, meat, and more meat.

Yeah.  That’s not the best description.  Tell you what, I’m just gonna leave the recipe here, followed by a picture of the delicious, delicious results, and you leave your comments letting me know how awesome of a chef I am, and how good the meat loaf was.

Deal?

Awesome Meatloaf, Y’all

  • 2 1/2 tablespoons chili powder
  • 1 1/2 pounds ground turkey – 80/20
  • 1 crushed garlic clove
  • 4oz, Salsa (low carb.  I prefer On the Border Mild)
  • 2 eggs
  • 1 tablespoon Worcestershire sauce
  • 1 3/4 cup steel-cut oatmeal
  • 2 Deli Slices, Cheese (I prefer the moz’rella)

With the exception of the cheese and the salsa, mix that mess up in a bowl.  When satisfied that’s still in the bowl, change it up by moving it into a loaf pan thing.  I dunno what those are called.

On top of that, you should layer the cheese (again, the moz’rella) and the the salsa.  Cook for 45-50 minutes at 375 degrees celsius.  Or fahrenheit.  The American one.

Oh, btw, you should have been preheating your oven at 400.  Sorry, should have told you that.
